Crispy flour bread with or without filling is a whole side of European confectionery art. Already in the Middle Ages they entered the menu and folklore of citizens and villagers, they were prepared for fairs, served at the noble table.
Confectioners made dozens of recipes for the waffles themselves and without counting the number of fillings and fillings. Waffle cones filled with cheese and seafood, with mushrooms, minced meat and vegetables. But there is no better waffle than filled with condensed milk, cream and just jam or honey. Sweet tubes and horns scatter from the street vendors’ counters like fearful sparrows.
Today we are preparing this luxurious treat at home. The process will be fascinating, but time consuming and – most difficult – to save at least some sweets from the most important small tastes.
General principles for the production of waffles
The presence of an electric waffle iron is a great advantage in the production of waffles. This significantly reduces the time and simplifies the process. In the absence of such an assistant, many refuse treatment and to no avail because waffles can be baked in a pan and even in the oven.
The main components of a waffle batter are eggs, flour, sugar and fat: butter or margarine. However, this is only a basic foundation, the dough is often supplemented with products that give the homemade waffles suppleness or, on the contrary, make them crispy. Such an additive can be sour cream, milk, kefir, cottage cheese. Usually vanilla for taste, but if desired it can be replaced with cinnamon powder. So that the waffles have a coffee taste, the dough is prepared with coffee brewed in milk.
How can you bake waffles in an electric mixer? Before baking, both work surfaces are generously rubbed with vegetable oil and only then added to the network. After complete heating, the dough is poured onto the work surface, for which the device remains closed for at least 10 minutes. The dough is poured strictly into the center of the base plate and covers the top without leveling. Baking typically takes one and a half to three minutes, depending on the performance of the device. Willingness can be determined and visually, when the crackle is propeksya enough, stops steaming. Cooking in a pan is almost no different from the previous version. Due to the lack of pressure on the dough from above, it should immediately be poured into a thin layer in order to maintain the desired shape and to reverse the time.
Bake waffles longer in the oven and the process itself is more time consuming. The dough is usually poured onto a baking sheet that has previously been rubbed with vegetable oil. However, it is best to cover it with a silicone substrate. Bake the waffles gradually in the oven. Start by holding it for four minutes, then take it out and let it stand for a minute. Then put the baking sheet back in the oven and bake for a minute.
Finished wafers remain in the form of cakes or rolled up immediately, still hot, in the form of horns and tubules.
Homemade waffles can be used as pastries or simply served with tea with jam or condensed milk. The most common application is tubules or horns with a filling.
A classic recipe for simple waffles with condensed milk – horn “Lakomka”
- big eggs – five pieces;
- 200 grams of sugar;
- Wheat flour – a glass;
- 200 gr. Quality margarine.
For the filling:
a small can of condensed milk.
Beat the eggs with sugar in a blender before frothing.
Add the melted, chilled margarine and everything will beat well again.
Stir with a whisk or spoon and add the sifted flour in small portions. Knead everything thoroughly and check the uniformity of the dough. Lumps shouldn’t stay.
We cover the top and bottom surfaces of the waffle iron with vegetable oil. We warm up for at least five minutes when closed.
We open, pour one and a half spoons of dough in the middle and close without waiting for them to spread. After a minute, carefully open the wafer with a spatula and immediately make it a cone. Close waffle iron at this time.
Turn the horn and pour the next portion of dough into the device.
Chilled waffles are filled with caramelized condensed milk.
Simple waffles in an electric waffle on sour cream
- melted butter – half a cup;
- Sugar – five tablespoons;
- a cup of wheat flour; half a cup of sour cream;
- Eggs – 5 pieces, selected.
Choose two bowls. Gently hold the egg yolk shell, split the egg shell. Squirrels must be drained into one bowl and the egg yolk into another.
Proteins are placed in the refrigerator, sugar is added to the egg yolk and ground carefully. It should be a homogeneous white mass.
Pour non-melted butter into the egg yolk, add sour cream and stir well. It is better to take a mixer, then the sugar grains will dissolve faster. Pour the flour little by little until it is homogeneous.
We get a bowl of squirrels. Add something, literally with a match head, salt and start beating slowly. The mixer speed is gradually increased. If we beat white in a strong foam, we move it to the egg yolk mass. We slowly disturb the curvy mass from top to bottom.
Pour a full spoonful of batter into the center of the grated butter and preheated form and seal tightly. Hold the handles to avoid weakening the pressure on the top plate and let the wafer bake for a minute and a half.
Place the product on the table with a knife or a wide scoop and immediately wrap it in a straw. You cannot hesitate, even slightly cooled cakes are not gently cut.
Recipe for unsweetened simple waffles on milk for electric waffles
- Wheat flour – 200 gr.;
- an egg;
- half a spoon of lemon;
- a glass of milk;
- three tablespoons of melted margarine;
- Baking powder – 0.5 spoon;
- half a teaspoon of vegetable oil.
Boil baking powder. Mix soda with citric acid, stir well.
Sow twice on a fine sieve, sow flour, mix with a self-made ripper. We don’t do this with a spoon, but with a whisk – the ripper is evenly distributed.
Beat the egg yolk with cool milk, pour over the flour, mix. In a thin trickle, stir the flour in a circle and enter the melted and cooled margarine. Beat, bring the dough to homogeneity. Then we cover the bowl with the canvas and stand aside for an hour. Put protein in the refrigerator at this time.
Beat the cooled protein in foam and mix into the batter. Apply a thin layer of vegetable oil to both halves of the waffle iron, twist it into the net and leave it closed to warm up.
We bake waffles according to the usual pattern. Finished products do not lay out a pile. It is advisable to put them on the grill to dry them out a bit.
Simple waffles on cottage cheese
elastic, 9%, curd cheese – 100 gr.;
two spoons of sugar;
50 gr. Of natural cream, preferably 72% butter;
three spoons of flour;
Teaspoon of vanilla sugar crystals;

- Kefir, maximum fat content – a glass;
- 100 grams of sugar;

Put the kefir in a bowl. We give soda and keep well stirred, hold for a quarter of an hour so that the “ripper” is activated in an acidic environment.
Beat eggs with sugar separately. We not only achieve uniformity, but also maximum dissolution of sugar crystals.
Combine kefir with egg mixture. Mix, add all the flour and stir well again.
Ready, the consistency of a rare sour cream, put the batter in a spoon on a preheated waffle iron. We bake for about two minutes.
Recipe for simple waffles in the oven on a baking sheet
- Squirrel of four eggs;
- 80 gr. Sugar, homemade powder;
- half a cup of flour;
- 5 gr. Crystalline vanillin;
- Cream – 4 tbsp. l
Put the protein in the fridge. After an hour we reach a small pinch of salt and slowly start beating. As they start to foam, the whisk revolutions gradually increase. Blow until a stable foam is. Mix the powdered sugar with the flour. Add the mixture twice, add vanilla sugar and whisk. Gradually mix the flour mixture with the beaten proteins, adding cool milk at the end.
Lubricate the silicone back with oil, you can also use a normal baking sheet. We heat the oven to a temperature of 180 degrees.
Pour a tablespoon of dough onto the prepared surface in three places and spread it carefully. Ideal for a circle with a diameter of no more than 15 cm and a thickness of 2 mm.
Waffles are baked in stages. First put the pan in the oven for four minutes. Then we take a minute on the table. Then put it back in the oven and ready for a minute.
Hot waffles roll up the cone or tube.
Simple waffles with coffee
- Instant coffee – 30 g;
- 150 ml milk;
- Standard bags with vanilla sugar;
- half a pack of sweet cream butter;
- three eggs;
- Sugar – 75 g;
- Dough machine, factory – 0.2 teaspoon;
- 150 grams of flour.
Pour milk into the pan. Add vanilla, set for maximum heat. Falling asleep in a hot state, we brew coffee, stir with a whisk and bring it to a boil. Set the heat to medium and brew the coffee with milk for three minutes. Cool, strain with a sieve.
The softened, slightly melted butter is whipped until creamy with sugar. Hit further, one by one we bring in the eggs. After each whisk, the oil mass for one minute.
Mix and mix the flour with the baking powder. Pour the mixture into the oil mass and mix it with the same mixer at low speed. Finally, add coffee with milk. Beat the coffee dough until smooth. Then we cover it with a linen napkin and last at least half an hour.
We classically bake waffles on a well heated waffle iron.
The simplest waffles in a pan without waffle irons
- three eggs;
- a full glass and 2 more spoons of sugar;
- a glass of wheat flour;
- 70 gr. Frozen homemade cream.
Waffles need liquid fat, but not hot fat. Melt the oil over low heat or in the microwave and let it cool well. Break three eggs into a bowl and start beating. Bring to froth, gradually pour granulated sugar. It is desirable to achieve complete saccharin dissolution.
When the mass of the sweet egg mass increases slightly, we gradually add flour like sugar. The result should be a firm dough.
Dry and heat the pan over medium heat. Pour oil into a thin layer and do not heat it up for more than 30 seconds.
Use a large spoon or small pan for pancakes to pour a small amount of batter into the pan. We turn around almost instantly, it doesn’t take more than 15 seconds to bake a page.
We place the finished waffles on a plate. Served with jam or condensed milk.
Tips for making waffles – useful tips
If you like crispy waffles that don’t soften when bottled and stored for a long time, choose recipes with the lowest fat content and high sugar content. Fill the tubes or horns with thick creams – custard, oil, protein and ordinary caramelized condensed milk are enough.
Roll up hot waffles with gloves to avoid burns. Neat pipe can be wrapped with a stick. It is desirable that its diameter does not exceed 1.5 to 2 cm. A beautiful horn can be obtained if the cake is folded using a cone used to bake buffer tubes.
